This is 100% raw Dublin honey that is simply extracted from the beehive frames and passed through a course filter/sieve to remove large particles of wax.

It then get placed in my creaming machine that simply mixes it for 15 minutes and then rests for 60 minutes. This is repeated for about 14 days depending on the honey until it starts to turn white. At this point it's bottled up and finished setting in the jar.

This particular batch was collected by my bees up on the farm here in Glenasmole and is from the late 2025 summer blossom. It’s made up of clover, bramble, rosebay willow-herb and a hint of heather.

Teh range of Softset honeys are my particular favourite especially spready think on a slice of toast or paired with a good cheese board.
