Second Serano Ham

I took the last ham out of the freezer yesterday and hung it up in the garage to defrost. Then this evening we rubbed it in salt and buried it in the box of salt where it will stay for the next month or so. I will work out the length of time later...

The river cottage guide recommends that it is weighted down with at least twice the weight of the ham so it has over 25kg on the lid of the box.

With the last ham I had in the box I was unsure where to put or what to do with the salt after but I was told why not keep it in a bin and use it on the driveway when it is frozen.
